Pound Cake Grilled Cheese Sandwich

 Ingredients:

Pound Cake, sliced thickly: 4 slices

Brie Cheese (small slices): As required

Fig Jam: 2tsp

Unsalted Butter: For grilling

Rosemary, finely chopped: 1 sprig

Cream Cheese: 2tbsp 

Small Fresh Figs, 

(Cut into wedges)  2

Method of Preparation:

1. Spread enough cheese slices on to 2 slices of pound cake.

2. Spread a generous amount of fig jam onto the other 2 slices.

3. Put the slices of jam and cheese together and keep the sandwich aside.

4. Heat up a grill pan and add butter.

5. Once the butter starts melting and bubbling add the chopped rosemary 

6. Brush this mixture onto both sides of the sandwiches.

7. Grill them on low heat until the cheese starts to melt.

8. Add more butter and rosemary into the pan if required.

9. Remove from the heat and serve it with cream cheese / clotted cream and fresh figs.

FRIED ICECREAM

Ingredients

Vanilla ice cream-------------4 Scoop
Desiccated coconut-----------1/2 Cup
Cashew nuts(Crushed)-------1/4 Cup
Egg-----------------------------2Nos
Breadcrumbs------------------1/4 Cup
Oil------------------------------ For deep fry

Method

1.Scoop ice cream into 4 - 1/2 cup sized balls. Place on butter paper and freeze until firm, about 1 hour.
2.In a shallow dish, take desiccated coconut and in another dish take crushed cashew nuts . In another bowl beat egg until foamy. Roll Icecream balls first  in  desiccated coconut ,egg , in cashew nuts, egg respectively  and finally in breadcrumbs covering Icecream completely. Freeze again until firm about 3 hours.
3.Heat a heavy saucepan, heat oil

4.Using a  slotted spoon, fry ice cream balls 1 or 2 at a time, for 10 to 15 seconds, until golden. Drain quickly on paper towels and serve immediately.

ENJOY.....with chocolate or strawberry syrup topping

PACHA MANGO JUICE

PACHA MANGA JUICE/ RAW MANGO JUICE

INGREDIENTS

  • 1.      RAW MANGO                            -  2
  • 2.     SUGAR                                        -  AS REQUIRED
  • 3.     MINT LEAVES                           -  7 LEAVES
  • 4.     KANTHARI MULAKU/ BIRDS EYE CHILLI     -  3
  • 5.     SALT                                           -   1 PINCH
  • 6.     WATER
  • 7.     ICE CUBES



METHOD:

1.     CHOP THE MANGOES INTO SMALL PIECES.

2.     ADD  ALL THE INGREDIENTS INTO THE BLENDER/ MIXER, WATER LEVEL SHOULD BE JUST ABOVE THE MANGOES.

3.     BLEND IT TO A SMOOTH JUICE.


4.     STRAIN AND SERVE.

POTATO PIZZA without OVEN






INGREDIENTS :-


1. POTATO PEELED AND CUT INTO THIN ROUND SLICES ------ 2

2. TOMATO SAUCE ---------------------------------------------------------- 2 TABLE SPOON

3. EGG( BEATEN WITH SALT AND PEPPER) --------------------------1

4. TOMATO( CUT INTO THIN ROUND SLICES) -----------------------1 SMALL

5. CAPSICUM( CUT INTO THIN LONG SLICES) ----------------------- ½

6. OREGANO --------------------------------------------------------------------- 1/3 TEASPOON

7. MOZZARELLA CHEESE ( GRATED)-------------------------------------- 5 TABLE SPOON

8. PEPPER --------------------------------------------------------------------------- 1 TEA SPOON

9. SALT --------------------------------------------------------------------------------TO TASTE

10. OLIVES ( SLICED--------------------------------------------------------------- 10pcs

11. BUTTER



METHOD

1. Apply butter in the pan.

2. Place the potatoes in the pan evenly.

3. Sprinkle salt and pepper.

4. Cover with lid and cook for 5 minutes.

5. Turn off the heat, Open the lid and pour the tomato sauce , place the tomatoes, capsicum , pour the beaten eggs, sprinkle oregano, salt and pepper, sprinkle cheese and finally place the olives.

6. Cover with lid and Cook for 15 minutes under low flame.

7. Switch-off the flame and serve hot.

Bread omelette



Bread omelette


Ingredients
1.       Egg                                  : 3
2.       Bread                              :2 pieces
3.       Turmeric powder          : ½ teaspoon
4.       Chilli powder                  :1 teaspoon
5.       Chopped Onion              :1 small
6.       Chopped Tomato           : 1 small
7.       Chopped Green chillies : 2
8.       Chopped coriander       :1 teaspoon
9.       Chopped curry leaves   :1 teaspoon
10.   Pepper powder              :1/4 teaspoon
11.   Oil                                     :1 table spoon
12.   Salt to taste


PREPARATION:

·         Break egg into a bowl, add turmeric powder, chilli powder, pepper powder  & salt.
·         Beat the egg without forming the lumps.
·         Then add  onion  , tomato , green chillies , coriander leaves  &curry leaves .
·         Give a good mix & keep it aside.
·         Toast the bread in a pan , remove and keep it aside.
·         Add the oil into the hot pan and pour the egg  mixture .( put the pan on medium heat).
·         Cook for 1 mnt then place the toasted bread  over the omelette , remove the bread & keep it aside  .
·         Cook the omelette for one minute. Then place the plain side of the bread over the omelette & cook for 2  minutes.
·          Now flip the omelette carefully by holding both the bread.
·         Cook for 2 minutes on a low flame.
·         Serve hot with ketchup.

Shawarma




Shawarma


INGREDIENTS:
  •  Boneless, skinless chicken thighs or breasts (thinly cut)   :  ½ kg
  • Vinegar                                                                                   : 3 table spoon
  •  Pepper                                                                                    : 1 tablespoon
  • Salt                                                                                          : for taste
  • Juice lemon                                                                             : 1

FOR THE SAUCE:
  • Tahini or white seasam(made to paste)                                 : 1 tablespoon
  • Garlic crushed                                                                        : 1/2 cloves
  • Lemon juice                                                                            : 1 tablespoon
  • Yogurt                                                                                      : 2 tablespoon
  • Salt                                                                                          : for taste
  • Olive oil                                                                                   : 1 teaspoon                
KUBOOS  FILLINGS:
  • 1 large
  • Thinly sliced cucumbers
  • Thinly sliced onions
  • Thinly sliced tomatoes
  • Thinly sliced cabbage
  • Thinly sliced lettuce
PREPARATION:
  • Mix chicken , pepper, salt, vinegar, lime juice in a bowl and  marinate it for 8 hours
  • Heat a sauce pan and cook the chicken until done in a very little oil (in low flame 30 minutes).
  • While chicken is cooking prepare the sauce. Grind the sauce ingredients one by one and mix well, set aside.
  • When chicken is done, remove from the pan. Slice it or shred it into small pieces.
  • Now mix kuboos filling ingredients with the shredded chicken in the sauce pan.
  • Place enough mix on Kuboos and pour sauce. Roll it and you have SHAWARMA!!!!!!
  • Serve with pickle slices like carrot, cucumber, chilli, olives etc..(uppilittathu)
